Gourmet Mushrooms

CAPS LOCK is a micro mushroom farm growing fresh fungi in no-frills five-gallon buckets. (If you’re concerned about plastics, do check out The “How” below)! It's presently in a trial phase, and the goal is to produce super good mushrooms with a super small footprint, eventually using this farm to support my livelihood so I can show up stronger for community-rooted, resilience-based food work full-time.

  • Mushrooms are nutrient-rich, protein-packed, and deeply delicious. Their meaty texture and rich umami flavor make them a favorite in plant-based cooking and a versatile staple in just about any kitchen. Oyster mushrooms can even produce vitamin D when exposed to sunlight (yes, really).

    They’re also a grower’s dream. Mushrooms thrive indoors, vertically, and in small spaces. They can grow on materials like straw, hardwood pellets, spent grain, or cardboard, turning waste into nourishment. And when they’re done fruiting, the leftover substrate becomes excellent compost for the garden.

    I grow mushrooms because they’re good for people, good for the soil, and good for cities. CAPS LOCK helps me grow healthy food with a small footprint while sustaining my work in resilience gardening and community food systems.

  • CAPS LOCK mushrooms are grown in food-safe five-gallon buckets using a mix of substrates like straw, cardboard, hardwood pellets, and sawdust. While buckets cost more upfront than growing in plastic bags or blocks, I chose this method to reduce plastic waste and the risk of microplastics entering the growing process.

    After pasteurization, I mix in mushroom spawn and let the mycelium do its thing. In time, the buckets burst with fresh fungi, ready for harvest. The trickiest part is keeping the humidity just right, but with a little moisture management and a lot of love, these mushrooms thrive.
